Rice and Chicken

Step 1
Prepare the ingredient. Debone the chicken. Slice ginger, chop the garlic, and large cut green onions, etc.
Step 2
Fill the large pot with water. Add the chicken bone, deboned chicken, and other ingredients like ginger, garlic, green onion.
Step 3
Turn the heat to high until it boils, then reduce to medium heat. There will be blood gunks from the chicken in water, scoop them out.
Step 4
Add the soy sauce and Shao Xing Wine, simmer for 20 minutes. Open your windows if you do not want the ginger chicken all over your house.
Step 5
Prepare a big bowl with ice. When the chicken is done, immediately cool them down in the ice water bowl.
Step 6
I personally like to put the chicken back into the soup for 3 minutes to warm them up, then cut chicken.
Step 7
Serve chicken with rice and sliced cucumbers with the chicken soup. Take out some oil on top as it may be oily due to using only thigh meat.

This dish is to be fast and easy. The original recipe will use a whole chicken.
Use your rice cooker
Many other recipes suggest to cook the rice with the chicken broth from the pot. It sounds amazing to me but I do not own a rice cooker. If you do, you should definitely give it a try.
